Kimchi Fried Rice with Tofu

This hearty and warming dish is a staff favourite. Tangy kimchi is balanced with smokey tofu and savoury shiitake mushrooms, with a hint of creamy richness from the eggs. Best prepared within two days of delivery.
MEAL KIT INGREDIENTS
  • 2 cups rice
  • 500 g kimchi
  • 6 eggs
  • ¼ lb shiitake mushrooms
  • roasted seaweed
  • 210 g smoked tofu
YOU'LL NEED THESE BASICS
  • sesame oil
  • gluten free tamari
YOU'LL NEED THESE SUPPLIES
  • medium saucepan

  • large frying pan

STEP 1| COOK RICE

  • Bring 4 cups of water to boil in a saucepan. Stir in the rice and a pinch of salt. Cover the pot, turn to low and cook - no peeking! - for 18 minutes, then check if it is done. When done, turn the heat off, drain any remaining water, and leave rice in covered pot. (You can also use a rice cooker if you have one!)
STEP 2| PREPARE INGREDIENTS

  • While the rice is cooking, prepare your ingredients. Slice the green onions keeping whites and greens separate, and cut the tofu into half inch cubes. Wash and stem the mushrooms. Beat 2 eggs with 1 tablespoon of sesame oil and set aside.
STEP 3| COOK VEGGIES & TOFU

  • In a large pan over medium high heat, add 1 tbsp sesame oil (or more) to cover the pan. Add the tofu and mushrooms and cook for 5 minutes. Add the white parts of the green onion, and cook for 3 minutes. Add the kimchi and stir. Turn down the heat to medium. Add the cooked rice to the pan along with 2 tsp tamari and 1 tbsp sesame oil, mix until the ingredients are evenly distributed. Stir-fry for about 5 minutes.
STEP 4| ADD EGG MIX

  • Push rice to one side of the pan. Pour the beaten egg mixture onto the other side and let it sit for about 20 seconds so it begins to set, and then mix into the rice. Stir-fry for another minute until everything is mixed and heated through.
STEP 5| FRY EGGS

  • In another pan, heat 1 tbsp oil over medium heat. When hot, crack eggs into the pan, season with salt and pepper to taste, and fry until done to your taste - runny yolks are good.
STEP 6| SERVE

  • To serve, put the rice mixture into bowls, top with a fried egg, green part of onions to taste, and seaweed (crumbled or torn into pieces). Serve with extra tamari on the side.
