• Pre-heat oven to 425F
• Boil salted water and cook the Macaroni for 7 minutes

• Slice the Onion, Chop the Garlic, and slice the Bacon into bits
• Add the Bacon to a cold Skillet and heat on High

• Once the Bacon starts to heat up and release its oils, add the Onions and stir together. Keep cooking for 5 minutes or until the Bacon is crispy. Reduce the heat to medium and add the Garlic and stir for 2 minutes
• Add the Butter and Flour, quickly whisking to create a paste. Cook out the flour for 1 minute

• Slowly pour in the Milk and whisk until heated through and there are no lumps
• Add the Cheese and Chipotle Spice and stir until cheese is melted and the spice is fully incorporated then remove from heat

• Now add your cooked Macaroni to the pan, stir until fully combined
• Taste the sauce, and add Salt and/or Pepper to adjust the seasoning to your liking

• Sprinkle the Bread Crumbs on top and bake for 10 minutes or until Bread Crumbs are golden brown
