About the product
The leaves on romaine lettuce are crisp and slightly bitter and the crunchy mid rib is particularly succulent. Romaine adds crunch and flavour to mixed green salads.

General information
Storage Tip: Take off any bands holding it together, store in perforated bags in the crisper. Greens last longer wrapped in paper towels or a clean linen cloth in a perforated bag.

Preparation Tip: Wash and dry carefully, and don't tear, rip or cut up lettuce until just before serving to avoid losing nutrients and freshness.

Did you know... Lettuce can be cooked, especially romaine. It can be sautéed, braised, steamed or broiled.

Culinary Compatibility: Sesame seeds, roasted peppers, goat cheese, fresh herbs, various vinaigrettes and dressings: balsamic, lemon-Mayo, wine, or buttermilk dressing.

Health Information: Excellent source of folate and vitamins A, and C. Also contains calcium, iron potassium, and magnesium. Folate and iron help prevent and treat anemia, and folate is linked with good heart health and prevention of birth defects, and antioxidants are associated with lower rates of cancer, heart disease and cataracts.

AGROFRESCO is a farm operation of operation in Dolores Hidalgo, in the state of Guanajuato in Central Mexico and near San Miguel de Allende, north of Mexico City. Engineer Gustavo Gaya and his field engineers have been running 3 ranches of 60, 80 and 100 cultivated hectares since 2009, contracting his own crews from nearby indigenous communities and provides them with safe transport to and from the ranches, and pays workers more than minimum wage. They hope to complete their Fair Trade certification in the near future.

Flower beds between rows of cultivated crops, a push/pull strategy to control agricultural pests without having to resort to chemical inputs. Irrigation is done via drip-irrigation and water comes from one of their 3 wells. Large amounts of land are set aside to represent buffer zones to preserve the local ecosystem in and around each ranch.
