The green bean has a long, slender green pod with small seeds inside. The entire pod is edible. Green beans are available year-round, with a peak season of May to October. Store in the refrigerator, tightly wrapped in a plastic bag, for up to 5 days.

Put in a perforated plastic bag and store in crisper. Do not wash until just prior to use (moisture causes rusting on the beans). Fresh beans last for 4 days to a week.
Preparation Tip: Remove the top (stem end) of the bean. To optimize their sweet flavor, cut the beans as little as possible. Cook just until tender and bright green.
Did you know... They used to be called string beans because of the string that ran along the outer side of the pod, but by 1894 botanists had successfully removed the string through breeding experiments.
