General information
Storage Tip: Best eaten as soon as possible but can be stored for a few days wrapped in a paper towel in a plastic bag in the fridge.

Preparation Tip: Requires very thorough washing. The leaves cook quicker than the stalks, so if boiling, try putting the stalks in a few minutes before the leaves.

Did you know... There are three kinds of bok choy. Regular, which is about 20 inches, Baby which is 3-6 inches and Shanghai which is about 12 inches and looks like the others except it is all green rather than green and white.

Culinary Compatibility: Ginger, garlic, green onions, mushrooms.

Health Information: One cup of bok choy contains 20 calories and is an excellent source of folate, vitamins C and A. It is also a source of magnesium, calcium, iron and potassium. Chinese greens contain powerful phytochemicals that block cancer causing substances before they can damage cells. These phytochemicals also suppress tumor growth and induce protective enzymes in the body.
