Khorasan is though tto be the ancestor of today's modern Durum wheat family. Most pasta these days is made from Durum! The most popular brand of Khorasan is Kamut whose name comes from the Egyptian word for "wheat." Cowichan's Org Khorasan pasta may be a good alternative for those suffering wheat sensitivities. Khorasan is wehat, but since it is a simpler form, the gluten structure is different than today's modern wheat varieties.
