Eggplant is actually a berry. There are many varieties ranging in color from rich purple to white, in length from 2 to 12 inches and in shape from oblong to round. Eggplant is available year-round, with the peak season during August and September.

Eggplant is quite perishable. They last up to a week but are best eaten right away. Keep dry by wrapping in paper towel to absorb moisture.
Preparation Tip: Dark coloured eggplants with tough outer skins and lots of seeds benefit from salting to reduce bitterness and as well as the amount of oil needed for cooking.
Did you know... Eggplant absorb more fat than any other vegetable so choose methods such as broiling , baking, sautéing, grilling or braising rather than frying.

Doef's Greenhouses use “Integrated Pest Management (IPM)” to control pests in the greenhouse. This means that they make use of “biological pest controls” to eliminate the pests in the greenhouse – controls such as introducing predators to feed on the pests.
Their vegetables are picked at the peak of ripeness – the tomatoes are ripened on the vine and picked twice a week, the peppers are picked at about 90% ripeness, also twice a week, and the cucumbers are picked every day since they grow more quickly. From picking, they are packed and shipped within a couple of hours.
