The Fuyu persimmon is smaller and more tomato-shaped than the hachiya. When ripe, both have a red-orange skin and flesh. Persimmons are soft when completely ripe and have a smooth, creamy texture and a tangy-sweet flavor. Persimmons need to be eaten when very soft and mushy. The tannin in them, which causes your mouth to pucker up, is converted to sugar once ripe.
