Beef suet is a raw fat that surrounds the kidneys, with a high ratio of heart healthy Omega-3 fatty acids to Omega-6 fatty acids. Its high melting, smoke, and congealing points allow for suet’s specialized culinary applications. It is ideal for deep frying, due to its high smoke point. Solid at room temperature, suet can be grated into pastries and puddings that require a distinctly light and spongy texture, formed as suet melts at high temperatures in the later stages of baking. Beef suet may also be used as an ingredient in homemade sausages and bird-seed cakes, or rendered into tallow for use in everything from candles to soap to everyday cooking. Note: raw suet should be kept refrigerated.
