Evergreen is a Canadian company that has revolutionized the wheatgrass industry with years of research and experimentation. The result is a totally new concept of growing and juicing wheatgrass that produces a juice that is nutritionally superior to traditional methods. Evergreen Wheatgrass is planted in the fall season on organic farms. The winter wheat is in its grass stage for approximately 200 days. It grows very slowly through the cold Ontario winter accumulating and storing vitamins and minerals.
The cold also kills the mold common in indoor wheatgrass juice, which is toxic and should be avoided. By the time it reaches its nutritional peak in the spring it is only 10 - 14 inches tall.
In contrast, tray wheatgrass is grown indoors under fluorescent lighting. Because it is grown so quickly in 7 - 10 days, the plant has a relatively high level of simple sugars and is not given the time to convert these sugars into complex carbohydrates, vitamins, enzymes, and proteins. This may explain the quick burst of energy that users sometimes experience after drinking the juice.
With indoor grown grass, a certain percentage of seed does not germinate. These seeds rot in the soil and often mold grows as a result. This mold is picked up by the roots and causes a bitter aftertaste. People who are sensitive to mold often get headaches or feel nausea within minutes after consuming. This is not detoxification, but a reaction to the mold.
The wheatgrass juice is chilled in 1.5 minutes to 35°F, and then quickly frozen. Analysis of the product after freezing show preservation of the nutrients.
