High in iron and vitamins, this grass-finished beef kidney is a delicious and underrated piece of beef. Cut it in half to remove any tubes and fat and then soak in salt water for around two hours. Don't overcook it or it'll get a bit tough, but if you do it just right? It's some of the beefiest beef you'll ever have and it goes darn fine in pies!
