Packed with Vitamins A and C, beta-carotene and fibre, apricots are beautifully orange colored fruits with velvety skin and flesh that are one of the first signs of summer. Relatives to peaches, apricots are small and not too juicy but definitely smooth and sweet, with a smooth, oval pit that falls out easily when the fruit is halved. Hints of their flavour edging can be described as almost musky, with a faint tartness that lies somewhere between a peach and a plum.
You can use these small golden fruits to give a Middle Eastern or Moroccan flavour to chicken or vegetable stews, or simply add them to your breakfast cereal. China has grown apricots for over 4,000 years. You can store them in a plastic bag in the refrigerator for up to 3 to 5 days.
