Part of the brassicas family, Bok Choy has white or green, thick crunchy stems with light to dark green wide leaves. The crunchy white stalks are tender and the dark green leaves give a nice colour to stir-fries, salads and clear soups.
When raw, Bok choy has a crunchy, slightly fibrous consistency with a sweet, green flavor mixed with notable cabbage nuances and a mild mustard-like bite. When cooked, the texture softens into a tender consistency, and the flavor mellows into an earthy, mild taste

Best eaten as soon as possible but can be stored for a few days wrapped in a paper towel in a plastic bag in the fridge.
Preparation Tip: Requires very thorough washing. The leaves cook quicker than the stalks, so if boiling, try putting the stalks in a few minutes before the leaves.
Did you know... There are three kinds of bok choy. Regular, which is about 20 inches, Baby which is 3-6 inches and Shanghai which is about 12 inches and looks like the others except it is all green rather than green and white.
