Considered a "Stone fruit" and related closely to Apricots, plums, cherries and almonds; Peaches are distribguished by they're soft fuzz covering their skins, when mature are yellow-orange with a deep red blushing on the side that was facing the sun. Peaches have a distinct flavour balancing sweetingness and acidity.
BC Peaches are only available during the summer months. Peaches are grown in regions with temperate climates, with wet winters and hot and dry summers.
A great source for vitamins A and B-complex, C, E and K;, as well are thiamin, riboflavin, niacin, potassium, iron and phosphorus, fiber and calcium. Truly a superfruit!

Peaches can be kept at room temperature to soften, but they do not continue to ripen once picked, so leaving them at room temperature will not increase their sweetness. Peaches can be stored in the fridge uncovered for up to a week.
Preparation Tip: Before cooking or preserving a peach, blanch it to remove its skin. Place it in boiling water for 30-60 seconds then remove with a slotted spoon. Once the fruit is cool the skin should slip off.
