Store a pineapple at room temperature away from direct sunlight for a day or two to reduce the acidity( but this won't increase sweetness). A pineapple tastes better at room temperature but if you are not planning to eat it right away, store in plastic in the refrigerator for a day or two. Cutting into pieces and storing in its own juice, it will keep for up to a week.
Preparation Tip: Slice the top and bottom off the pineapple then stand pineapple up on a cutting board and pare off the skin with long lengthwise cuts from top to bottom.
