This is an Indonesian type of mango originating from a Hawaiian seedling strain. The fruit is a small, flat, oblong shape, 6 - 12 ounces, greenish yellow to deep golden when ripe; delicious, very sweet, rich in flavor and close to fiber free. This variety is an excellent mango in all ways. It is similar to a banana in that as it ripens the full skin surface turns a beautiful yellow colour. The skin is thin & can be peeled back to reveal a succulent fruit. The fruit is fairly juicy & the taste is outstanding. The Ataulfo gives off a faint tropical fragrance.

Storage Tip:
Store unripe mangos at room temperature. To speed up ripening place in a paper bag with a banana. A ripe mango can be stored in the fridge for up to a week. Mangos taste best if brought to room temperature before eating.
Preparation Tip: One way to prepare a mango is to cut the "cheeks" away from the pit, and cross hatch the flesh with a sharp knife before inverting it by turning the concave shape into a convex one. A pattern of cubes will pop out making for an easy way to eat a mango.
Culinary Compatibility: Mangos are good served both sweet and savoury. Try in a chutney or with other fruits in a pie.
Health Information: High in beta carotene, fibre, vitamins C, E, and B6. They are also a source of potassium, folate, riboflavin, thiamin and niacin.
