These imperfect carrots are excellent for juicing, baking or eating fresh. They may not be the perfect conical shape and may be big or small, or even broken but they are sweet, crunchy, delicious and nutritious.
Avoid storing carrots near apples, which emit ethylene gas that can give carrots a bitter taste. A light rinsing is all that's necessary for young carrots, but older carrots should be peeled. If carrots have become limp, recrisp them in a bowl of ice water.

Remove tops before storing. Store in a perforated plastic bag in the crisper. Don’t store with apples as the ethylene gas emitted by them will make your carrots taste bitter.
