The lime leaf is frequently used as a seasoning to provide bright citrus overtones in a variety of dishes, and often used in Cambodian, Indonesian and Thai cooking for soups and curries.
Leave the lime leaf whole or tear it into large pieces when adding to soups to add flavour to the entire mixture, or it can be thinly sliced when adding to curries, salads, or stir-frys to flavour the dish without it becoming overpowering.
Leaves can be stored in an airtight bag and stored in the refridgerator, and can even be kept frozen for up to 6 months.
