Made from White Spring Wheat grown on the Canadian prairie, it produces a lighter, lower gluten strength flour that works well for many loaves, muffins, cookies, cakes and so on. It’s milder tasting and a good flour to start with if you are switching your baking from ‘refined’ white flour to a much more nutritional whole grain flour.
