Gruyere has a hard, yellow to brown rind, with a yellowish-ivory body & large, regular eyes. Firm & resilient in consistency, it has a mild, hazelnut flavour, with hints of sharpness & sweetness. Well suited to cheese trays & with fruit, nuts & bread.
