Phil Robertson & Sebastian Sztabzyb a couple of guys who fell in love with coffee and decided to leave their cushy engineering jobs to open cafes and a roasterie in their hometown, Calgary. They now strive to push the bar of coffee higher every day! They originally decided to open a café back in 2004. At that time, they were working as engineers and became home espresso aficionados. Through a combination of online searches, selective reading and a great deal of travel, they discovered that there was a coffee world, particularly in Portland and Seattle at the time, that did not exist in Calgary and was only known to those few lucky ones who made the trip to these special places. So, they spent 2005 and 2006 traveling, visiting cafes and roasteries, meeting owners and picking their brains. Of course, they also tasted a good amount of coffee. Finally, in December of 2006, they were able to secure a spot at the Calgary Farmers' Market, and opened their doors on March 30, 2007. Since then they have been continuously overwhelmed by the positive reaction to their product, staff and overall experience. They weren't sure how Calgary would respond to their somewhat fanatic approach to coffee.

In 2009, they had a fairly eventful year. First, they launched their roasting operation, where they roast all of their coffees. Then, to wrap up the year in style, they opened their second café in Marda Loop. In 2010, with Marda Loop not even a year old, they opened the doors to their third café, this one in the new expansion wing of Chinook Centre. Similar in seating to Marda Loop, the Chinook café was their biggest undertaking to date, boasting three espresso machines and a dedicated coffee brewing bar.
