This mellow flavoured cabbage is considered by many to be one of the best of its category for cooking. Savoy has a loose, full head of crinkled leaves varying from dark to pale green. To use, please steam, braise, or stirfry. Use in salads, soups, and stews. Shred for coleslaws. It is very low in sodium and is a good source of vitamin C.

Storage Tip: Store whole in perforated plastic in crisper.

Preparation Tip: Remove damaged or discoloured leaves. Cut out tough core at base. Be careful not to overcook.

Sudoa Farm has been operating for over 15 years, first in Mission, B.C and, since 1996, in Notch Hill B.C. (just outside Sorrento). The farm is certified organic by the North Okanagan Organic Association and consists of 126 acres of mixed land where they grow hay and grain with the co-operation of Keith Boulter (an organic farming neighbour) as well as raising beef cattle and 10 to 15 acres of mixed vegetables. They grow all their own vegetable transplants and hire local people to assist us in the fields. They grow a crop rotation that allows for part of the fields to be fallow/cover cropped each season, and they are working to increase their capacity for storage vegetables, as well as on their new project of growing organic vegetable seeds.

They sell a full line of vegetables at the Sorrento, East Vancouver and Coquitlam Farmers Markets as well as distributing through a Vancouver wholesaler. Their mutual commitment to sustainable organic agriculture and providing quality food for local customers gives Sudoa Farm the security to keep growing and Urban Harvest a dedicated supplier.

Sudoa is a member of the WWOOF program and we welcome local and international volunteers for 'working vacations' and to learn about organic farming. He has been farming organically for 20 years now. Originally an avid gardener from London, England, his hobby seems to has grown with him. Next year I am being joined on the farm by his son, Daniel Moore, and friend, Jim Hooper, and with help from Mother Nature they look forward to many future harvests to share with you! Sue Moore
