A flavourful heirloom variety raved about by Elliot Coleman. Beautiful Burgundy outer leaves can be harvested beginning at 35 days and round, red roots in 60 days. Seeds can be sown 2.5 - 5 cm (1-2 in) apart and 1 cm (1/2 in) deep, usually min-May. Seeds germinate in 4-20 days at the soil temperature of 7-21 degrees. Thin out and enjoy the baby beets and greens in late spring, with full beets mid-late summer, depending on your spacing. Excellent for pickling or winter storage.
