Dino Kale, supposedly called "dinosaur" because its long, narrow leaves look like reptilian skin, it is actually an antique kale variety known as Tuscan, Black Kale, or Cavallo Nero. Chopped and simmered briefly for 20-30 minutes, it is the sweetest, most tender kale of all.

Storage Tip: Store kale in the coldest part of the fridge in a plastic bag. Although kale keeps well, the texture deteriorates and the flavour becomes stronger with time.

Preparation Tip: Stems are edible but best to use a knife to remove any that are thicker than a pencil as they are quite tough.

Did you know... Kale is in the cruciferous family along with cabbage and broccoli

Culinary Compatibility: Ginger, garlic, pine nuts, sesame oil, fresh herbs.

Health Information: Kale is very high in vitamins A and C and is a good source of iron, calcium magnesium, potassium, thiamin, riboflavin, folate and vitamins B6 and E.

Snow Farm Snow Farm
Surrey, BC
"I believe we have the largest celery farm, including the non-organic farms, in all of BC," says Susan Snow. The Snow family has been producing over 85 different organic vegetables for 9 years. They have a unique arrangement with the Municipality of Delta and the Delta Wildlife Trust to lease 60 acres of prime farmland with the proviso that the land is farmed organically. The Snows also grow rotational crops (parsley instead of potatoes, for instance) within neighboring organic farms. The 40 acres farmed this way provides a cleansing break for pests and diseases and gives the Snows more room to farm.
