This variety produces large and bright leaves, which are very popular in Thai food. Large young leaves and stems have very pleasant flavor that is milder than other varieties. It is an essential fresh cut accompaniment to many Vietnamese dishes, as well it is used in oriental and Thai cooking.

Basil is best used fresh and loses most of its aromatic properties when dried.
It keeps longest when stored at (air-conditioned) room temperature in a perforated plastic bag (optimal temperature is 16C).
Preparation Tip: There's debate about whether tearing basil leaves instead of chopping them helps to prevent browning, but many kitchen experts still advise delicately slicing the leaves to allow the full basil flavour to be released in dishes. This is especially important in raw versus cooked dishes.
