A bochet is a type of mead that is made by first cooking the honey until it is caramelized. The process of bocheting the honey takes a lot of time, care, and attention as it darkens and develops more intense flavors. Evantually, the honey takes on a significantly more toffee or caramel flavor. Intensely toffee and caramel on the nose. The sweetness is balanced by the mild acidity brought out by the honey cooking process and addition of salt. On the palette the caramel is slightly sweet and silky with a lovely lingering cocoa finish. This mead stands well on its own and pairs nicely with nuts and sweeter creamy cheeses like brie, gouda, and manchego. Would go well with an evening of charcuterie and tapas.
