Wild Fire breads are often marketed as “yeast free.” Free of commercially cultivated yeasts, the breads rely on carefully maintained wild yeast cultures (from yeasts occurring naturally on the grains) to produce slow risen “levain” bread. Using a stone mill imported from Austria, Wild Fire's bakers grind all of their whole grain flours and produce own sifted spelt flour. They are currently using locally grown wheat from Metchosin, BC blended with certified organic wheat to make their whole wheat flour. Certified organic spelt and rye come from a grain growing co-operative in Armstrong, BC. The ingredients are Canadian grown, either locally using sustainable farming methods or are certified organic.

Wildfire Bread and Pastry is a small, family-owned bakery located on Quadra St. in Downtown Victoria. They opened in April 2000, as a bakery committed to offering a variety of healthy, naturally leavened breads and pastries.

Wildfire uses all organic ingredients to bake traditional naturally leavened breads in wood fired brick ovens and quality all-organic pastry. Their breads are free of commercially cultivated yeast, instead using wild yeast cultures ("sourdough" or "levain") that occur naturally in the air to produce slow-rising dough that is shaped into loaves by hand. Using this traditional fermentation process allows the protein to be more digestible and the lactic acid bacteria present in sourdough increases magnesium and phosphorus solubility. Visiting their bakery at 1517 Quadra St. you'll find delicious pastries including naturally leavened croissants, danishes, and cinnamon buns. They also serve fabulous, cooperatively grown organic coffee and offer several delicious lunch options.

Wildfire is committed to using local ingredients as much as possible and to supporting local non-corporate economics. They're working to enhance the community by encouraging socially and environmentally sustainable systems of living.
