Kefir is a fermented milk product with a delicious taste that is enjoyed throughout Europe for its unique flavor and health benefits. Kefir has a consistency lighter than yogurt, but different because of its carbonated nature and characteristic tangy flavor. Kefir, whose name comes from the Turkish word for “well-being,” has a long history of use in treating everything from stomach ulcers to pneumonia. Originally made by fermenting milk in sheep hide bags, it is now made by adding culture to the milk. The resulting kefir contains naturally occurring probiotic bacteria that offers health benefits. On top of being packed with nutrients, kefir is easily digested and can help to relieve common gastrointestinal problems, including lactose intolerance and irritable bowel syndrome. It is an extremely high source of protein and calcium, and rich in B vitamins. Kefir can be used in a multitude of recipes or enjoyed by itself as a beverage or with a spoon. Note: Because of the carbonated nature of kefir there is always some pressure under the seal and the top of the container should bulge slightly.

Saugeen Country Yogurt
Markdale, ON
Saugeen Country Farm has been in operation since 1986. There are three principle operators on this small family farm located just 2 hours north of Toronto, Ontario. There is Ingo and Sabina Huesing, and Johanna Schneider. All three are originally from Germany and only began farming in 1986 when they started Saugeen County Farm. They eventully began making plain yogurt on the farm, using the milk from their herd of 50 dairy cows and specially selected bacterial culture.

Saugeen Country Farm has been certified organic by the Bio-Dynamic Society of Ontario since 1988. Ingo Huesing says that they aim to make the farm as self-sustaining as possible, which means growing all of their own feed, breeding and birthing their own cows, and processing all of the yogurt right on the farm. Farming organically, says Ingo, is the only way that they know how to farm - he would never have farmed any other way. Like many other children of the 60s, the Huesings were a part of the "back to the land" movement which has inspired them to farm responsibly, giving back to the land what they take from it. Ingo, Sabina and Johanna maintain strong ties to their farmland and farm with only the utmost respect for the earth.
