Revel Cider, hailing from Ontario, is at the forefront of creative, sustainably produced cider in Canada. They have a range of unique cider-based products, many of which sell out very quickly. They use the minimal possible sulphur in their production and do things unique to many New World cideries; they allow for wild fermentation, using the yeasts ambient in their cidery and naturally occuring on the skins of the apples, which creates a very dynamic and complex flavour profile. While certainly a modern endeavour, these ciders harken back to the tannic, rustic ciders of old.
