This future classic is our take on a mild salami; full of complexity and subtle notes of pepper and wine. Great depth of flavor and one of the easiest salami to pair. Each Salami ferments for 3 days and is dry-aged for up to 28 days in a temperature and humidity controlled Aging Room. Prepared using 153g of pork per 100g of finished product. The weight loss is a result of careful Dry-Aging. Enjoy!
