Sea Asparagus (Salicornia) is found widely distributed over the Northern Hemisphere and in Southern Africa.
This bright and salty vegetable can be used as is, but many folks prefer to blanch it first - 1 or 2 minutes in boiling water until it turns bright green that rinse it off in freezing cold water. Now it's ready to be tossed into salads, stirfrys and fish seasonings, or cooked up simply with a little butter and fresh onion. Another common use for the vegetable is as a natural salt and mineral provider to homemade pickled vegetable recipes.
