These imperfect carrots are excellent for juicing, baking or eating fresh. They may not be the perfect conical shape and may be big or small, or even broken but they are sweet, crunchy, delicious and nutritious.

Avoid storing carrots near apples, which emit ethylene gas that can give carrots a bitter taste. A light rinsing is all that's necessary for young carrots, but older carrots should be peeled. If carrots have become limp, recrisp them in a bowl of ice water.

Storage Tip: Remove tops before storing. Store in a perforated plastic bag in the crisper. Don’t store with apples as the ethylene gas emitted by them will make your carrots taste bitter.

Preparation Tip: Many of the nutrients are in the peel so just scrub well under running water.

The fertile Lillooet Valley, surrounded by the towering Coastal Mountains of British Columbia and flanked by the mighty Fraser River, is the home of Fountainview Farm, BC’s largest producer of certified organic carrots. This fertile tract of land has been farmed using organic methods since 1987. Eighty-five of the farm’s 160 acres are under production and are certified organic by the BC Association of Regenerative Agriculture (BCARA). Although organic nante carrots are the farm’s sole commercial crops, it also boasts a productive vineyard, tree fruit orchard and mixed vegetable garden.
