Available through the fall and winter, cranberries are one of a few varieties of berry native to North America. These naturally tart berries are grown in bogs or low-lying areas which are flooded with water to protect the crop as well as to harvest them. These berries float in water due to four small air pockets in the center of each berry which give them buoyancy and bounce and has earned them the nickname of "Bounceberry". Historically used for medicinal purposes by First Nations people, this berry has become a staple for North American holiday tables. Cranberries store well - about two weeks in the refrigerator or up to a year in the freezer.
