Potato Leek Gratin

- 2 tbsp coconut oil
- 1/2 c coconut milk
- 1/4 c crumbled crackers
- pepper to taste
- 2 lg leeks, white part chopped
- 4 potatoes, peeled, diced and boiled
- 1/2 c grated cheddar cheese
- Sprinkle minced green onions for top
1)Preheat oven to 350ºF. Heat oil in skillet. Add leeks and sauté, cover until wilted.
2)Beat leeks into potatoes with milk. Stir until fully mixed. Pour into an oiled shallow 2 qt. casserole. Sprinkle cheese, cracker crumbs and onion on top.
3)Bake 35 to 40 min, or until golden. Let stand 5 to 10 min and cut.
