Ingredients:
  • 2 tbsp flour
  • 5 tbsp. sugar
  • 2 cups flour
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup butter milk
  • 1 pt of blueberries
  • Streusel Topping:
  • 2 tbs butter, diced
  • Batter:
  • 2 tsp baking powder
  • 1/2 cups butter
  • 1/4 tsp lemon zest
  • 1 1/2 tbsp flour
  • 1/2 tsp cinnamon
  • 1 tsp vanilla

Directions:

Streusel topping:

1) Cut the butter into the flour, sugar & cinnamon with a fork until mixture resembles course crumbs. Set aside.

2) Sprinkle 1 ½ tbsp. of flour on blueberries and set aside.

3) Combine flour, baking powder and salt in medium bowl.

4) In a mixer, beat 1/2 cup butter with 3/4 cup sugar at medium speed until light and fluffy.

5) Add eggs, vanilla and lemon zest. Fold into dry ingredients, alternately with butter milk.

6) Gently fold in blueberries.

7) Spoon batter into a greased muffin tin and top with struesel topping mix.

Bake 20-25 minutes.
