Savory Chicken Burritos

Ingredients:
  • 2 roasted peppers
  • 2 tbsp coconut oil
  • 2 tsp chili powder
  • Salsa
  • 1 lb Ground Chicken
  • 3-4 zucchinis
  • 1 clove garlic - chopped
  • Sprinkle of cheese
  • Organic Sour cream

Directions:

1) Over medium heat, cook ground chicken with 1 tbsp of coconut oil and a pinch of salt, pepper, cayenne, and cumin. Cook until crumbles are browned and cook though. Drain and set aside.
2)Cut zucchini and roasted peppers into matchsticks. In a a separate pan, heat with oil and saute garlic and zucchini. Add chili powder. Toss in peppers. Briefly stir fry just until the veggies heat through. Combine meat and veggies together in a bowl and spoon into tortillas.
3)Roll up mixture in the tortillas put in an oiled baking dish and bake for 5 minutes. Pour your favorite salsa over and bake for 5 - 10 min or until golden brown.
