Fabulous Red Pepper Frittata

Ingredients:
  • 1 tbsp coconut oil
  • 1 red pepper, diced
  • 1 clove garlic, minced
  • 1 red onion, chopped
  • 1 cup broccoli, diced very fine
  • 6 free range eggs
  • Fresh parsley, minced
  • Pinch of turmeric
  • Dash cayenne
  • Salt & pepper to taste

Directions:

A recipe for a colourful morning!

1) Sauté onion, garlic, cayenne, and turmeric in coconut oil

2) Add red pepper and broccoli.

3) In a medium bowl, whisk eggs with salt and pepper until well beaten.

4) Pour eggs over sauteed veggies, reduce heat, and stir just until veggies are mixed through egg. Let bottom brown, about 5 minutes.

Garnish with parsley and serve!
