Broccoli Mashed Potatoes

  • 1 tbsp. coconut oil
  • 2 sm potatoes (1/2 lb), unpeeled and quartered
  • 3 c broccoli florets and sliced stalks
  • 1/8 tsp. salt
  • 1 medium onion, chopped
  • dash pepper

1)Place potatoes in large saucepan; add water until 2 inches above potatoes. Bring to a boil. Reduce heat; cover and simmer 10 min. Add broccoli and onion.
2)Return to a boil over high heat. Reduce heat; cover and simmer 10 to 12 min. or until broccoli is tender. Drain well.
3)In food processor, combine well-drained vegetables and remaining ingredients. Process or beat until smooth. Serve immediately.
