Quick Coconut Curry

  • 1 can coconut milk
  • 2 tbsp. red curry paste
  • broccoli
  • 1 can chickpeas
  • crushed garlic
  • diced onions

  1. Saute onion, garlic and broccoli in a tsp. of oil till golden brown on medium heat. Add coconut milk and let simmer for 8 minutes.

  2. Stir in curry paste and add in chickpeas.

  3. Bring to a boil for a minute, then reduce heat and let cool.

  4. Let sauce thicken for a few minutes while cooling.

  5. Place prawns in a pan with oil and simmer until pink or cooked thoroughly.

  6. Serve with rice.
