Grilled Halibut Tortillas

Halibut continually ranks as one of the top seafood items at SPUD, both with staff and customers. With a light, smooth and even creamy texture (for fish), it's hard to go wrong with it. Easy cooking, wide ranging flavor combinations, it's all good! This pairing of Mexican and American influences brings a healthy and delicious meal that your family will certainly enjoy!

Ingredients:
- 2 fillets of halibut
- 6 tbsp chili powder
- 1/4 head of cabbage thinly sliced or grated
- 1 large carrot, grated
- 1/4 cup rice vinegar
- 2 tbsp coconut oil
- 1/4 cup chopped cilantro leaves
- Pepper to taste
- 1/2 avocado, sliced
- salsa
- sliced mango
- 8 tortillas

Directions:
1)Cover fillets in chill powder. Let sit for 20 min to overnight in your fridge.
2)Mix cabbage, carrot, vinegar, oil, cilantro, salt and pepper in a bowl. Set aside.
3)Cook the Halibut until done (when the meat is firm and can be separated with a fork), approximately 5 min per side.
4)Portion Halibut into bite-sized chunks, and fill the tortillas with the fish, some salsa, a few slices of avocado and fruit, then top with the slaw.
