Roasted Salmon with Caramelized Lemon Rounds

Ingredients:
- 1 side salmon fillet, or 4 fillet portions, skin on
- Freshly ground black pepper
- Paprika
- Generous handful fresh dill sprigs
- 2 lemons
- Sea Salt

Directions:
1)Lay the salmon fillet(s) skin side down on a baking sheet or baking dish. Season with salt and pepper, lightly sprinkle with paprika and arrange the dill on top. Squeeze the juice of a lemon over it, covering as much of the fish as possible. If desired, zest the squeezed lemon a bit and add that, too.
2)Bake until firm, approximately 20 minutes.
3)While the salmon is baking, slice the remaining lemon into 1/4-inch rounds, discarding the ends. Heat a skillet on high, very lightly coat the bottom of the pan with olive oil and add lemon slices. Sauté until brown on both sides, about 5 to 7 minutes.
4)When done, portion salmon and garnish with lemons. Best served with rice and roasted light veggies, such as tomatoes.
