Summer Vegetable Curry

Ingredients:
- 1 tbsp coconut oil
- 1 tsp turmeric
- 2 yams, diced
- 3/4 lb green beans
- 2 cloves garlic
- 2 tsp coriander
- 1 tsp cumin
- 1 tbsp fresh grated ginger
- 4 zucchini, dice
- 1 broccoli in florets
- 1/4 c of grated coconut
- 1/2 c boiling water
- 4 tomatoes, peeled & diced
- 1/2 c cashews

Directions:
1)Heat oil. Sauté garlic lightly. Add spices and fry for 3-4 minutes stirring constantly.
2)Add veggies, stirring to coat well with seasoning, for about 7 minutes. Dissolve coconut in boiling water and add to veggies. 3)Blanch & peel tomatoes. Dice them and toss with everything else. Cover pan and let simmer for 20 minutes. Before serving add cashews.
