Spinach Cheddar Bake

Ingredients:
- 2 Tbsp. coconut oil
- 2 Tbsp. All-purpose Flour
- 3/4 cups Cheddar Cheese, grated
- black pepper to taste
- 1 bunch Spinach, chopped
- 1 medium Onion, chopped
- 1 ½ cups plain Yogurt

Directions:
1)Pre-heat oven to 350ºF, and lightly grease a loaf pan or small casserole dish.
2)Rinse the spinach, remove the stems, and chop the leaves. Place the chopped spinach in a large skillet over medium heat, cover, and steam until wilted, tossing them occasionally.
3)In a skillet over med-high heat, melt the oil. Add the onion and cook until soft, about 5 min. Add the flour and stir for another min. Gradually whisk in the yogurt. Add the spinach leaves, and turn them to coat with the mixture.
4)Remove the skillet from the heat source and blend in the cheese. Season with pepper to taste.
5)Pour mixture into prepared pan and bake for about 20 min . Serve warm.
