Broccoli Carrot Slaw

  • 1 1/2 tbsp. fresh lemon juice
  • 1 1/2 tsp. grated onion
  • 3 tbsp. mayonnaise
  • 1 1/4 tsp. mustard
  • 1 1/4 cups shredded peeled broccoli stems
  • 3/4 cup shredded peeled carrots

1)Combine mayonnaise, lemon juice, onion and mustard in medium bowl; whisk to blend. Add broccoli and carrots; toss to coat. Season with salt and pepper.
2)Refrigerate for about 20 minutes and serve. Simply double the recipe if you are serving more than two.
