Ingredients:
- broth
- 1 1/2 tbsp fresh ginger, finely grated
- 1 1/2 cups finely diced carrots
- 1 1/2 cups finely diced red onion
- 2 cups shredded bok choy
- 4 cups shredded spinach
- 1 cake tofu in 1/2 inch pieces
- green onions to garnish

Directions:
1)Bring vegetable stock to a boil. Add ginger, carrots, onion and bok choy. Simmer for 10 minutes until veggies are soft.
2)Add spinach & tofu. Simmer for 5 minutes. Garnish with green onion.
