  • broth
  • 1 1/2 tbsp fresh ginger, finely grated
  • 1 1/2 cups finely diced carrots
  • 1 1/2 cups finely diced red onion
  • 2 cups shredded bok choy
  • 4 cups shredded spinach
  • 1 cake tofu in 1/2 inch pieces
  • green onions to garnish

1)Bring vegetable stock to a boil. Add ginger, carrots, onion and bok choy. Simmer for 10 minutes until veggies are soft.
2)Add spinach & tofu. Simmer for 5 minutes. Garnish with green onion.
