Chickpea Curry

Ingredients:
- 1 tbsp coconut oil
- 1 can chickpeas
- 2 c sliced celery
- 1 c apple slices
- 1/2 c chopped onion
- 2 tsp curry powder
- 1 tsp minced garlic
- 4 tomatoes, diced
- 3 c cooked quinoa

Directions:
1)Heat oil in large skillet until hot. Add celery, apple, onion, curry powder, and garlic; cook and stir until veggies are crisp-tender, about 8 minutes.
2)Stir in chickpeas and tomatoes. Bring to a boil; reduce heat and simmer, uncovered, until flavours are blended, about 5 minutes.
3)Serve over cooked Quinoa.
