Baked Veggie Samosa

Ingredients:
  • 1 cup coconut milk
  • 2 yams, peeled, diced
  • 1 tbsp coconut oil
  • DOUGH:
  • 2 1/2 cups flour
  • 1/2 tsp salt
  • FILLING:
  • 1 c finely minced onion
  • 2 cloves garlic, minced
  • 1 tsp dried coriander
  • 1/2 tsp salt
  • 1 1/2 c uncooked green peas
  • 2 tbsp lemon juice
  • cayenne pepper to taste

Directions:

1)DOUGH: Mix flour & salt in medium bowl. Make a well in the centre, and add liquid. Mix into smooth dough adding extra flour, as needed. The dough will be quite soft. Knead for 5 min. Cover & refrigerate until needed.
2)FILLING: Boil yams until very soft. Mash and set aside in bowl. Melt oil in a heavy skillet. Add onion, garlic, coriander and salt. 3)Sauté over medium heat until the onions are quite soft. Add to yams, with remaining ingredients. Mix well, but try not to smash the peas. Cool for at least 15 minutes before filling the pastries.
4)ROLL dough into 1 inch balls, flatten into 5 inch circles & fill with 11/2 tbsp of filling. Fold edges together & crimp with a fork. 5)Bake on well-oiled cookie sheet for 15 min at 425, turn and bake at 325 for 10 min & serve.
