Sweet Cinnamon Rhubarb Muffins

Ingredients:
  • 2 1/2 cups flour
  • 1 1/4 cups packed brown sugar
  • 1 egg
  • 1/2 cups melted butter
  • 1 cup butter milk (or reg milk with 1 tsp vinegar, sit for 15 minutes)
  • 1 tsp vanilla
  • 2 cups chopped rhubarb
  • Topping:
  • 1/2 cup brown sugar
  • 1 tbsp melted butter
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Directions:

Preheat oven to 350ºF.

1) In medium bowl, combine dry ingredients.

2) In separate bowl, beat egg, add butter, milk & vanilla.

3) Combine wet with dry & stir just until blended.

4) Add rhubarb.

5) Spoon into greased muffin tins.

6) Mix topping ingredients together and drizzle over each muffin.

Bake for 20 to 25 minutes.
