Ingredients:
  • ground pepper
  • 1 pkg. extra firm tofu
  • 2 eggs
  • 2 tsp ground cumin
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 cups of green lentils
  • 3/4 cup chopped green pepper.
  • Salt

Directions:

1)Boil lentils in water for 20 min. or until soft.
2)Rinse with cold water and let cool before using.
3)In a large bowl combine tofu and eggs. Then stir in cumin, miced garlic, cilantro and salt and pepper.
4)Add the chopped green pepper to the lentils.
5)Pack the mixture into an oiled loaf pan and bake at 375 degrees for 50 minutes to an hour.
6)Remove from the oven and let sit for 5 minutes before cutting.
