Vegan Pumpkin Spice Muffins

  • 1/2 cup maple syrup
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 2 cups whole wheat flour
  • 1 15 oz can pumpkin puree
  • 1/2 cup water
  • 1/2 cup raisins
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt

Preheat oven to 375ºF and grease a muffin tray with coconut oil.

1) Mix flour, maple syrup, baking powder, baking soda, salt, cinnamon, nutmeg, cloves and ginger in a large bowl.

2) Add the pumpkin, water and raisins. Stir until just mixed.

3) Fill the muffin tray with batter.

4) Bake for 20 -25 minutes.

Remove from oven and let stand 1 to 2 minutes, then remove muffins from the pan and cool on a rack. Store in an airtight container.
